Vinification
The harvest takes place when the grapes are optimally ripe. The grapes are destemmed as soon as they arrive in the cellar and are then vinified in the traditional way. Daily pumping over ensures a delicate extraction. The vinification process takes about twenty days, with temperatures carefully controlled. After pressing, the wine remains in barrels for malolactic fermentation before being aged in barrels.
