The Grapes are harvested by hand and vinified by spontaneous fermentation in stainless steel tanks.

The wine undergoes 100 % malolactic fermentation and ages on the fine yeast for 18 months before bottling.

Chablis obtains its very distinctive mineral character from its cool northern climate and its very calcareous soil.

The Domaine Louis Moreau Chablis Vaillons Premier Cru is a generous, fleshy and lively wine that shows a nice balance of minerality, fruitiness and elegance.

Description

Louis Moreau

          The Moreau family has lived in Chablis since 1814 and Louis is now the sixth generation winemaker.

         After studying oenology-viticulture at the University of Fresno State (California) and several experiments in different California wineries, Louis returned to Chablis to succeed his father.

         Strong in his university career, and eager to pass on a vineyard with respect for the environment to future generations, Louis advocates a substantiated work of the vine. He is looking for the most natural solution possible to preserve the quality of his vines and grapes
