. This Valpolicello Ripasso wine from Rocca Alata is an integral part of an area rich in history, dotted with ancient fortresses and noble villas. This Ripasso is produced according to a unique method, in which Valpolicella wine is fermented again together with the grape skins from which Amarone emerged. The result is a firmly structured wine, but with great elegance and appeal, with a rich bouquet of wild red berries and soft nuances of licorice and mint. Delicious with baked pastas, stews and marinades and with aged cheeses.
Apassimento process of making Amarone wine
Cantina di Soave is a cooperative of about 400 different winegrowers that was founded in the year 1898, in the village of Soave, just east of Verona, near Lake Garda. It is today one of the most prestigious Italian wine producers. The cooperative consists of many small wine companies, including Rocca Alata , who grow the grapes under strict supervision and deliver them to the passionate winemaker of the Cantina di Soave. In addition to the Rocca Alata Valpolicella Ripasso we also have the Rocca Alata Valpolicella Amarone
