"Don David" Chardonnay Reserve - a smooth, delicate white wine, named after the winery's founder, Don David Michel, who has put a lot of time and energy into developing and expanding the company. In the production of wine grapes used Chardonnay harvested from vineyards Calchaquí Valleys.
The harvest takes place in the second or third week of February, when the berries are optimally ripe. Grapes subject to thorough sorting and recycling. Fermentation of yeast selected from the passages at a controlled temperature of 14-16 ° C. 70 % of the wort is fermented in the traditional way and the remaining 30 % is fermented in oak barrels, followed by malolactic fermentation and aging on the lees for 9 months
