Tasting Note:
Brilliant red, ruby red tones and a violet and black background. Odor Very good ripeness and fruit concentration. Fresh bell pepper, bell pepper, plums and red currants, coffee and integrated soft oak. Sweet, fruity. With soft, round and well-matured tannins. Final with freshness and a lot of elegance. A juicy and smooth wine. With a round attack and a slightly chalky feeling in the aftertaste, with a long persistence on the palate.
Altimus represents the maximum expression of the creativity and art of the oenologist who each year selects the most representative grapes of each variety in order to obtain the best cuts and thus obtain the most selected wine.
A wine made in one of the highest wine regions in the world, the Cafayate Valley, located at 1,700 meters above sea level. Vines chosen from the winery's remarkable estates make this blend a unique one in which the virtues of each of its varieties are reflected.
Altimus is a blend of wines of different varieties, focused on a very refined personality and a great bouquet. This characteristic is sought in the vineyards with highly concentrated grapes, small grains, balanced plants. The choice of the harvest day is carefully analyzed. Once the optimal ripening point of the plant is reached, the harvest begins in which all the details of the process are taken care of. It is used cold from the arrival of the grapes at the winery. Pre-fermentation macerations at 5ºC. Use of selected and native yeasts. Very gentle works during alcoholic fermentation. Fermentation temperatures between 26ºC and 28ºC. Macerations after fermentation. The alcoholic fermentation of these wines is done using different technologies such as fermentation in individual 225 liter oak barrels, in 6,000 liter barrels and other batches in small stainless steel tanks. Before malolactic fermentation, each variety is crushed and taken to new French oak barrels, where fermentation takes place and rests for 12 months. After this period, the blend is made by carefully selecting the best participating barrels. Then it returns to the same barrels where it will complete its maturation for another 6 months. It is bottled without stabilizing or filtering to keep all its characters intact. Over the years it is possible to find a small natural sediment that will not affect the properties of the wine
